Fixings 

For the Bean stew Oil: 

  • 2 tablespoons Sichuan peppercorns 
  • 1 inch-long bit of cinnamon 
  • 2 star anise 
  • 1 glass oil 
  • ¼ glass squashed red pepper pieces 

For the Meat and Sui Mi Ya Cai: 

  • 3 teaspoons oil 
  • 8 oz. ground pork 
  • 2 teaspoons sweet bean sauce or hoisin sauce 
  • 2 teaspoons shaoxing wine 
  • 1 teaspoon dim soy sauce 
  • ½ teaspoon five zest powder 
  • ⅓ glass sui mi ya cai 

For the sauce: 

  • 2 tablespoons sesame glue (tahini) 
  • 3 tablespoons soy sauce 
  • 2 teaspoons sugar 
  • ¼ teaspoon five zest powder 
  • ½ teaspoon Sichuan peppercorn powder (we ground entire Sichuan peppercorns in a mortar and pestle) 
  • ½ measure of your readied bean stew oil (unnerving, yet yes!) 
  • 2 cloves garlic, in all respects finely minced 
  • ¼ glass hot cooking water from the noodles 
  • For the Noodles and Veg: 
  • 1 lb crisp or dried white noodles, medium thickness 
  • 1 little bundle verdant greens (spinach, bok choy, or choy aggregate) 
  • slashed peanuts 
  • slashed scallion (discretionary) 

Guidelines 

  1. To make the bean stew oil: In a little pot, include the Sichuan peppercorns, cinnamon stick, star anise, and oil. Over medium low warmth, gradually warmth to 325 degrees, and after that turn off the warmth. Hold up 6 - 7 minutes, at that point evacuate the peppercorns, cinnamon stick, and star anise with an opened spoon. 
  2. Include the pulverized red pepper drops and enable them to soak in the hot oil. It should begin smelling fragrant, practically like popcorn. Enable the oil to cool. This makes more bean stew oil than you'll require, yet you'll be happy to have it close by for use in different dishes. Store in a glass container and keep refrigerated.
